Cheese cakes are one thing that is loved by everyone. This recipe, however, is great for all those too who look after their weight due to fitness or medical reasons.


  • 9 whole cinnamon graham crackers, low-fat and broken in half
  • Cooking spray
  • 2 tablespoons of melted unsalted butter
  • Two 8-ounce packages of fat-free softened cream cheese
  • 1 and a half cups sugar
  • Two 8-ounce packages of softened Neufchatel cream cheese
  • 1 cup of sour reduced-fat cream
  • 2 tablespoons of all-purpose flour
  • 3 egg whites
  • 2 large eggs
  • 1 teaspoon of vanilla extract
  • Assorted toppings
  • 1 teaspoon lemon zest (finely grated)


Preheat oven to around 350°F. Pulse graham crackers in food processor until they get crumbled. Add one or two tablespoons of water with butter; pulse until it gets moistened. Wrap outside area of the springform pan (9 inch) with foil for preventing the leaks. Coat insides of pan with the cooking spray and then press the crumbs on the bottom. Bake them until browned for around 8 minutes. Let it cool for around 10 minutes. Beat both sugar and the cream cheeses meanwhile on a medium-high speed with a mixer until smooth for 5 minutes and beat in sour cream on a low speed. Whisk 3 egg whites light in a bowl; add to the mixture of cheese along with the flour, 2 whole eggs, lemon zest and vanilla. Beat on a medium speed until it gets fluffy in around 3 minutes and then pour over crust. Place cheesecake in one roasting pan and then add warm water enough to come 1 quarter of way up the springform’s sides. Bake it until cake looks set but center still jiggles for around 1 hour and 10 minutes. Then turn off oven and keep cheesecake inside with door closed for around 20 minutes. Remove cake from water bath and then transfer to rack. Run a sharp knife around its edges, then cool completely. Let it chill until firm for at least 7 to 8 hours.
