Spring demands the lemon bars; those delicious, portable treats of tart which are perfect for an evening tea on your terrace or for a picnic. These old-fashioned yummy lemon bars pack contains pack of the robust lemon flavors, without being too sweet or too tart. They are so satisfying and come together just in a few minutes by hand. A buttery, flaky and soft shortbread crust is actually the base for golden yellow filling of lemon that tops it. The filling sets up as they bake, into a beautiful shade of yellow. It is light yet dense, smooth and creamy.


For the Crust:
  • 1 1/2 sticks diced unsalted butter
  • 1/2 cup of confectioner's sugar (little more for garnish)
  • 1/4 cup light brown sugar
  • 2 cups of all-purpose flour
  • 1/4 teaspoon salt
  • Vegetable oil, for the greasing
For the Filling:
  • 2 egg yolks, plus 4 large eggs
  • 2 cups of granulated sugar
  • 1 teaspoon of grated lemon zest
  • 1/3 cup sifted, all-purpose flour
  • 1 cup of fresh lemon juice (about 8 lemons)


Making the crust: Position rack in middle of your oven and preheat it to 350°F. Grease a 9x13 inch pan with the vegetable oil. Line it with a foil, leaving overhand of 2 inch on all the sides; also grease foil with the oil. Pulse the flour, butter, salt and both the sugars in food processor until dough comes together completely in about a minute. Press evenly in bottom and about half inch up in the sides of prepared pan, to make sure that there are no remaining cracks. Bake it until the crust gets golden in about 25 minutes. Making the filling: Whisk yolks and the whole eggs, flour and sugar in a bowl till the batter gets smooth. Add the lemon juice and zest. Remove crust from oven and then reduce its temperature down to 300°F. Pour filling over this warm crust and then return to oven. Bake until filling seems just set (between 30-35 minutes). Leave the bars to get cooled down in a pan on the rack, and then refrigerate them until firm, for 2 hours at least. Lift out of pan using foil and slice. Dusting it with the confectioner’s sugar would give it a beautiful look before serving.

Recipe End Notes

You can also add 2 drops of the yellow food color for making a glaze. Pour it over your dessert as soon as it comes out of your oven and let it cool in a pan. It is unbelievably great and delicious for all those who have a sweet tooth and are tart lemon lovers.
