Vegetarian Collard Greens- Southern Style

About Recipe

This is one of the most famous vegetarian healthy recipes. The collard greens are made without any smoked meat and chicken broth. It is healthier but do not expect to sacrifice on taste because you would never miss the chicken or meat.


  • 1 tablespoon butter
  • 1 tablespoon of olive oil
  • Half large, chopped onion
  • 1 teaspoon of red pepper flakes
  • 1 pound chopped collard greens
  • 1 finely chopped clove of garlic
  • 3 cups of vegetable stock
  • Salt
  • Black pepper (freshly ground)
  • 2 chopped and seeded tomatoes


Heat butter and oil in one large pot over the medium heat. Sauté the onions till they get slightly softened for around 2 minutes. Add garlic and red pepper flakes to it and cook for another minute. Add the collard greens and again cook for a minute. Now add vegetable stock to it and cover the lid and bring to a simmer. You need to cool it until the greens become tender in about 40 minutes. Season it with the fresh black pepper and salt after adding the tomatoes. Serve it while it is hot.
